Nnitrozoamin
N-nitrosoamin is a general term for a class of organic compounds characterized by a nitroso group (N=O) attached to a nitrogen atom. These compounds are also known as nitrosamines. The general chemical structure is R2N-N=O, where R represents an alkyl or aryl group. N-nitrosoamin can be formed through various chemical reactions, most notably through the reaction of secondary or tertiary amines with nitrosating agents. Nitrosating agents are substances that can donate a nitrosonium ion (NO+). Common sources of nitrosating agents in the environment and food include nitrites and nitrogen oxides.
The formation of N-nitrosoamin is a concern because many of these compounds are known or suspected carcinogens.
