Kosteudenerottimet

Kosteudenerottimet, also known as envelope fryers or dryer fryers, are a type of food processing equipment used primarily in the production of french fries and other potato products. They consist of a series of high-temperature dryers and fryers in series, which are used to rapidly dry and fry potatoes to produce a crispy exterior and fluffy interior.

The process used in kosteudenerottimet starts with the pre-frying of potatoes in a shallow oil bath. The partially fried potatoes are then transferred to the enzyme treatment section, where pancreatic enzymes are applied to break down some of the potato starch, reducing the formation of foam during frying and increasing the fryer's capacity. After enzyme treatment, the partially fried potatoes are then dried to remove excess moisture, and then they are fried again in a hot oil bath to achieve the desired crispiness.
