Kiehumislämpötiloina refers to the boiling points of substances, a fundamental physical property. The boiling point is the temperature at which a liquid turns into a gas at a given pressure. At this temperature, the vapor pressure of the liquid equals the surrounding atmospheric pressure. When this equilibrium is reached, bubbles of vapor form within the liquid and rise to the surface, escaping as gas.

The boiling point of a substance is dependent on both the substance's chemical composition and the ambient pressure. For example, water boils at 100 degrees Celsius (212 degrees Fahrenheit) at standard atmospheric pressure (1 atmosphere or 101.325 kilopascals). However, at higher altitudes where atmospheric pressure is lower, water boils at a lower temperature. Conversely, in a pressure cooker, where pressure is increased, water boils at a higher temperature, allowing food to cook faster.

Different substances have distinct boiling points due to varying intermolecular forces. Substances with strong intermolecular forces, such as hydrogen bonds, generally have higher boiling points than those with weaker forces, like van der Waals forces. For instance, ethanol, with hydrogen bonding, has a lower boiling point than water, which also exhibits hydrogen bonding but has stronger attractions. Understanding boiling points is crucial in various scientific and industrial applications, including distillation, chemical synthesis, and thermodynamics.
