Gæringsprocessen, or fermentation, is a metabolic process that converts sugar to acids, gases, or alcohol. It occurs in yeast and bacteria, and also in oxygen-starved muscle cells, as in the case of lactic acid fermentation. This process does not require oxygen and is therefore described as anaerobic.

Fermentation is an ancient process, used for thousands of years in the production of foods and beverages such as bread, yogurt, cheese, wine, and beer. In the food industry, fermentation is used to improve the flavor, texture, and nutritional value of food products. For example, the lactic acid produced during the fermentation of milk gives yogurt its characteristic tangy flavor and creamy texture. In baking, yeast fermentation produces carbon dioxide gas, which causes bread dough to rise.

Microorganisms play a crucial role in fermentation. Different types of microorganisms, such as specific strains of yeast and bacteria, are responsible for different types of fermentation. For instance, Saccharomyces cerevisiae is the yeast commonly used in baking and brewing, while Lactobacillus species are responsible for the fermentation of milk into yogurt and cheese.

The biochemical reactions involved in fermentation vary depending on the type of organism and the substrate being fermented. However, a common feature is the breakdown of glucose into simpler compounds, releasing energy in the form of ATP. This energy is then used by the microorganisms for their metabolic activities. Fermentation is a vital process in both industrial applications and in the natural environment, contributing to nutrient cycling and the production of numerous essential products.
