Eddiksyregjæring

Eddiksyregjæring is the process by which ethanol is converted into acetic acid. This transformation is primarily carried out by a group of bacteria known as Acetobacter, which are aerobic, meaning they require oxygen to function. The process is fundamental to the production of vinegar, a common household condiment and preservative.

The biochemical pathway involves the oxidation of ethanol (CH3CH2OH) to acetaldehyde (CH3CHO) and then further to acetic acid (CH3COOH). This is typically facilitated by enzymes present in the Acetobacter bacteria. The overall reaction can be simplified as: CH3CH2OH + O2 → CH3COOH + H2O.

Vinegar production historically relied on natural fermentation, where alcoholic beverages like wine or cider were exposed to air, allowing naturally occurring Acetobacter to convert the alcohol. Modern industrial production often utilizes controlled environments to optimize conditions for bacterial growth and acetic acid production, including temperature, oxygen levels, and nutrient availability.
