Deacetilálásnak is a chemical process that involves the removal of an acetyl group (CH3CO-) from a molecule. This is essentially the reverse of acetylation, which adds an acetyl group. Deacetylation can occur through various chemical reactions, including hydrolysis, where water is used to break the bond, or by enzymatic action. Enzymes that catalyze deacetylation are known as deacetylases.

In biological systems, deacetylation plays a crucial role in regulating the function of proteins, particularly histones. Histones are proteins that package DNA in the nucleus of eukaryotic cells. Acetylation of histones generally leads to a more relaxed chromatin structure, promoting gene expression, while deacetylation causes chromatin condensation and gene silencing. This epigenetic modification is a dynamic process controlled by the opposing actions of histone acetyltransferases (HATs) and histone deacetylases (HDACs).

This process is also relevant in the modification of non-protein molecules, such as carbohydrates and lipids, where the removal of acetyl groups can alter their physical and chemical properties.
