Citromhéjat

Citromhéjat, also known as lemon zest, refers to the outer, colored peel of a lemon. It is rich in essential oils and volatile aromatic compounds that contribute significantly to the flavor and fragrance of the fruit. The zest is typically removed from the lemon using a microplane, zester, or a fine grater, taking care to avoid the bitter white pith underneath, known as the albedo.

In culinary applications, citromhéjat is widely used as a flavoring agent in both sweet and savory dishes. It can be added to baked goods, desserts, marinades, sauces, dressings, and beverages to impart a bright, fresh, and citrusy aroma and taste. Its essential oils, such as limonene, are responsible for this characteristic flavor. Citromhéjat can be used fresh, dried, or candied. Dried zest retains some flavor but is less potent than fresh. Candied zest, often simmered in syrup, offers a sweeter and more intense lemon flavor.
