Chemestetiske, or the chemesthetic sense, refers to the detection of chemical stimuli by sensory nerves in mucous membranes, typically producing sensations such as burning, cooling, tingling, stinging, or irritation. It is primarily mediated by the trigeminal nerve and is distinct from taste (gustation) and smell (olfaction). Chemesthesis contributes to how we experience flavor and irritation in the mouth, throat, and nasal passages.

The sensations arise when chemical compounds activate receptors on free nerve endings. A key group involves transient receptor potential (TRP) ion channels. TRPV1 responds to capsaicin in chili peppers and to heat; TRPM8 responds to menthol and cooling temperatures; TRPA1 is activated by irritants such as allyl isothiocyanate found in wasabi and mustard oil. Signal transmission reaches the brainstem and higher centers, integrating with taste and olfaction to shape overall flavor and protective reflexes.

Common examples include capsaicin producing burning, menthol creating cooling, and wasabi or mustard oils causing pungency. Beyond culinary use, chemesthesis influences consumer perception, product development, and safety assessments. Individual sensitivity varies due to genetic differences, age, prior exposure, and adaptation to repeated stimulation.

In research and clinical contexts, chemesthesis is studied alongside gustation and olfaction to understand comprehensive flavor perception and somatosensory function. It underpins experiences ranging from everyday eating to responses to irritants in air and environmental exposure, highlighting the multisensory nature of oral and nasal sensation.
