Amylaasientsyymiä

Amylaasientsyymiä is the Finnish term for amylase enzyme. Amylases are a group of enzymes that catalyze the hydrolysis of starch into sugars. They are found in many organisms, including humans, animals, plants, and microorganisms. In humans, amylase is primarily produced by the salivary glands and the pancreas. Salivary amylase begins the digestion of carbohydrates in the mouth, breaking down starch into smaller polysaccharides and disaccharides. Pancreatic amylase continues this process in the small intestine, further breaking down starch and other complex carbohydrates into simpler sugars that can be absorbed by the body.

The activity of amylase is crucial for energy metabolism. The presence and activity of amylase in biological samples can be used for diagnostic purposes. For example, elevated levels of amylase in the blood can indicate pancreatic inflammation (pancreatitis) or other pancreatic disorders. Similarly, amylase is also found in other bodily fluids, and its measurement can be part of various diagnostic tests. In industrial applications, amylases are widely used in baking to improve dough consistency and bread texture, in the brewing industry to convert starches into fermentable sugars, and in the production of high-fructose corn syrup. Different types of amylases exist, classified by their optimal pH and temperature, and their specific substrates, such as alpha-amylase, beta-amylase, and glucoamylase.
