AVS1, also known as the Avian Avidin gene, is a gene found in birds that encodes for the protein avidin. Avidin is a glycoprotein that has an extremely high affinity for biotin, also known as vitamin B7. This strong binding interaction is one of the tightest known non-covalent interactions in nature. The primary function of avidin in birds is believed to be related to its role in protecting biotin from degradation within the egg. This is particularly important as biotin is essential for embryonic development and is present in the egg white.
