Tärkkelystyyppien refers to the different types of starch found in nature and in processed forms. Starch is a carbohydrate that serves as the primary energy storage molecule in plants. It is composed of glucose units linked together. The two main components of starch are amylose and amylopectin. The relative proportions of these two polymers determine the physical and chemical properties of the starch, leading to various starch types.

Amylose is a linear polysaccharide, while amylopectin is a branched polysaccharide. The ratio of amylose to amylopectin varies significantly among different plant sources. For example, regular corn starch typically contains about 25% amylose, while waxy corn starch, which is almost entirely amylopectin, contains less than 1% amylose. This difference impacts how the starch behaves when heated in water, affecting its thickening ability, clarity, and retrogradation (the tendency to re-crystallize over time).

Different tärkkelystyyppien are derived from various botanical sources such as corn, potato, wheat, rice, and tapioca. Each source yields starch with unique characteristics. Modified starches are also a significant category, where native starches are altered through chemical or physical processes to enhance specific properties like stability, solubility, or viscosity. These modifications allow for tailored applications in food processing, paper manufacturing, textiles, and pharmaceuticals, where different starch types are chosen based on the required functional attributes for a particular use.
