Kergitusained

Biological kergitusained primarily refer to yeast (pärm). Yeast is a living microorganism that ferments sugars in the dough, producing carbon dioxide and alcohol. This process, known as fermentation, not only causes rising but also contributes significantly to the flavor and aroma of baked goods like bread. The rate of yeast activity is influenced by temperature and the presence of food for the yeast.
