Karvasvälittäjäaineet, or bitter substances, are a diverse group of naturally occurring chemical compounds found in plants. These compounds are characterized by their intensely bitter taste. Their primary role in plants is often as a defense mechanism against herbivores, as the unpleasant taste deters animals from consuming them.

Many different chemical classes can exhibit bitter properties, including alkaloids, glycosides, and terpenes. Alkaloids, such as quinine found in cinchona bark, are nitrogen-containing compounds that are often pharmacologically active. Glycosides, like naringin in grapefruit, consist of a sugar molecule attached to a non-sugar component. Terpenes, such as humulone in hops, are a large class of organic compounds derived from isoprene units.

The perception of bitterness is mediated by specific taste receptors on the tongue. Humans have a variety of bitter taste receptors, which can detect a wide range of different bitter compounds. This sensitivity likely evolved as a protective measure to avoid ingesting potentially toxic substances, as many poisonous compounds are bitter.

Beyond their defensive function in plants and their role in taste perception, some karvasvälittäjäaineet have significant applications. Quinine, for example, has been historically used to treat malaria. Other bitter compounds are used in the food and beverage industry to add complexity to flavors, such as in certain beers and aperitifs. Research also continues into the potential medicinal properties of various bitter plant extracts.
