Emulsiokerros
Emulsiokerros refers to the layer within an emulsion where the dispersed phase and continuous phase meet. An emulsion is a mixture of two immiscible liquids, such as oil and water, where one liquid is dispersed in the other in the form of small droplets. Emulsifiers, which are molecules with both hydrophilic (water-attracting) and lipophilic (oil-attracting) parts, play a crucial role in stabilizing emulsions by forming a barrier at the interface between the two phases.
The emulsiokerros is essentially this interfacial layer. The emulsifier molecules orient themselves with their hydrophilic heads
