Emulsifikaator
Emulsifikaator is a substance that helps to form and stabilize emulsions. An emulsion is a mixture of two or more liquids that are normally immiscible, meaning they do not mix, such as oil and water. Emulsifiers work by reducing the interfacial tension between the two liquids. They have a hydrophilic (water-attracting) head and a lipophilic (oil-attracting) tail. The lipophilic tail dissolves in the oil phase, while the hydrophilic head dissolves in the water phase, effectively creating a bridge between the two immiscible liquids. This arrangement allows for the formation of small droplets of one liquid dispersed within the other, creating a stable emulsion.
Emulsifiers are widely used in various industries. In the food industry, they are common ingredients in products
