Emulgierfähigkeit
Emulgierfähigkeit refers to the ability of a substance, typically an emulsifier, to form and stabilize an emulsion. An emulsion is a mixture of two or more liquids that are normally immiscible, such as oil and water. The emulsifier works by reducing the interfacial tension between these liquids, allowing one liquid to be dispersed as tiny droplets within the other. Without an emulsifier, the liquids would quickly separate.
The effectiveness of emulsifier is measured by its capacity to create a stable emulsion that resists separation
