Aminosäurestruktur refers to the chemical structure of amino acids, the fundamental building blocks of proteins. Each amino acid consists of a central carbon atom, known as the alpha-carbon, to which four groups are attached. These groups are: an amino group (-NH2), a carboxyl group (-COOH), a hydrogen atom (-H), and a side chain, also called the R-group. The R-group is what differentiates one amino acid from another.

The amino group is basic, while the carboxyl group is acidic. This amphoteric nature allows amino acids to act as buffers. The R-group can vary significantly in size, charge, polarity, and chemical properties, leading to the diverse functions of proteins. For example, some R-groups are nonpolar and hydrophobic, while others are polar and hydrophilic. Some R-groups are charged, either positively or negatively, at physiological pH.

The sequence and arrangement of these amino acids linked together by peptide bonds form the primary structure of a protein. This sequence dictates the higher-order structures, namely the secondary, tertiary, and quaternary structures, which are crucial for a protein's specific three-dimensional shape and ultimately its biological function.
