Észterkötések, also known as ester linkages, are a type of functional group found in organic chemistry. They are characterized by the general formula R-COO-R', where R and R' represent alkyl or aryl groups. This linkage is formed through a condensation reaction between a carboxylic acid and an alcohol, with the elimination of a water molecule. The reverse reaction, hydrolysis, breaks the ester bond and regenerates the carboxylic acid and alcohol.

Esters are a diverse class of compounds with a wide range of applications. Many natural esters are responsible for the characteristic aromas and flavors of fruits and flowers. For example, isoamyl acetate is responsible for the scent of bananas, and ethyl butyrate is found in apples. In industry, esters are used as solvents, plasticizers, and in the production of polymers.

A particularly important type of ester linkage is found in triglycerides, the main components of fats and oils. Here, a glycerol molecule is esterified with three fatty acid molecules. Upon hydrolysis, these triglycerides yield glycerol and fatty acids. Another significant biological ester linkage is present in phospholipids, which are key components of cell membranes. In these molecules, one of the fatty acid hydroxyl groups of glycerol is replaced by a phosphate group, which is then esterified with another alcohol. DNA and RNA also contain ester linkages, forming the phosphodiester backbone that holds the nucleotide monomers together. The formation and cleavage of these ester bonds are fundamental to many biological processes.
