The sulfite process, also known as the sulfite pulping process, is a method used in the pulp and paper industry to convert wood into wood pulp. This pulp is then used to manufacture paper and other cellulose-based products. The sulfite process involves treating wood chips with a bisulfite solution, typically containing sulfur dioxide and a base such as calcium, magnesium, sodium, or ammonium. This chemical mixture breaks down the lignin, a complex polymer that binds cellulose fibers together in wood, allowing the cellulose to be separated and refined.

The key chemical reaction in the sulfite process is the hydrolysis of lignin by the bisulfite ions. Different bases used in the pulping liquor result in variations of the process, each with its own advantages and disadvantages regarding pulp yield, strength, and environmental impact. For example, calcium bisulfite pulping is older and produces a less environmentally friendly effluent, while magnesium and sodium bisulfite processes offer better recovery and reduced pollution. Ammonium bisulfite is less common due to ammonia's potential for air pollution. The temperature and pressure used during pulping are also critical parameters that influence the efficiency of lignin removal and the quality of the resulting pulp. After digestion, the pulp is washed to remove residual chemicals and lignin fragments, then bleached if necessary to achieve the desired brightness for paper production.
