Myoglobin is a protein found in muscle tissue. It is responsible for storing oxygen within muscle cells. Myoglobin is similar in structure to hemoglobin, the protein in red blood cells that carries oxygen throughout the body. However, myoglobin has a single heme group, which contains an iron atom that binds to oxygen, whereas hemoglobin has four heme groups. This allows myoglobin to bind and store oxygen more effectively for immediate use by the muscle.

The red color of meat is largely due to the presence of myoglobin. When meat is exposed to air, the iron in myoglobin oxidizes, causing the meat to turn brown. Myoglobin plays a crucial role in muscle function, particularly during periods of intense activity when the demand for oxygen exceeds the supply from the bloodstream. It acts as an oxygen reservoir, releasing oxygen as needed to sustain muscle contraction.

Myoglobin can also bind to carbon monoxide, forming carboxymyoglobin, which is a brighter red color than oxygenated myoglobin. This property is sometimes used in food processing to enhance the red appearance of processed meats. While myoglobin is essential for muscle function, elevated levels in the blood can indicate muscle damage, such as in cases of rhabdomyolysis or myocardial infarction.
