In gastronomy and food science, sensory analysis evaluates appearance, aroma, flavor, texture and aftertaste with trained panels or consumer tests.

Methods: Researchers use psychophysical methods to measure thresholds and perceptual scales, sensory panels with standardized protocols, and experiments on adaptation, masking and multimodal interactions. The term sensorisk also appears in clinical descriptions of sensory symptoms such as hyper- or hypoesthesia and in descriptions of sensory-friendly environments.
